How To Make Raspberry & Pine Nut Bars

Ingredients
- 1 cup of fresh raspberries
- 1/2 cup of pine nuts
- 1/2 cup of oats
- 1/4 cup of almond flour
- 1/4 cup of honey
- 1/4 cup of melted coconut oil
- 1/2 tsp of vanilla extract
- Pinch of salt
Instructions

Preheat the oven to 350°F (175°C) and line a baking dish with parchment paper.

In a food processor, combine the oats, almond flour, and pine nuts. Pulse until a coarse mixture forms.

In a separate bowl, whisk together the melted coconut oil, honey, vanilla extract, and salt.

Add the wet mixture to the dry mixture and stir until well combined.

Press the mixture into the bottom of the prepared baking dish, creating an even layer.

Top the mixture with fresh raspberries, gently pressing them into the dough.

Bake for 25 minutes, or until the edges are golden brown.

Allow to cool before cutting into bars.
