How To Make Iced Blueberry & Lime Cheesecake

Ingredients

  • 200g digestive biscuits
  • 80g unsalted butter, melted
  • 200g cream cheese
  • 200g Greek yogurt
  • 100g sugar
  • 1 lime, zest and juice
  • 150g blueberries
  • 100g powdered sugar
  • 2 tbsp water

Instructions

  1. Crush the digestive biscuits into fine crumbs and mix with melted butter. Press the mixture into the base of a lined cake tin and refrigerate for 30 minutes.

  2. In a separate bowl, beat the cream cheese, Greek yogurt, sugar, lime zest and juice until smooth and creamy. Gently fold in the blueberries.

  3. Pour the cream cheese mixture onto the biscuit base and smooth the top with a spatula. Freeze for at least 1 hour or until firm.

  4. In a small saucepan, heat the powdered sugar and water over low heat until dissolved. Set aside to cool.

  5. Once the cheesecake is firm, remove from the freezer and drizzle the glaze over the top. Return to the freezer for another 10 minutes to set.

  6. Remove from the freezer, slice into portions, and serve chilled.
