  • 1 cup of unsalted peanuts
  • 1 cup of granulated sugar
  • 1/2 cup of light corn syrup
  • 1/8 tsp of salt
  • 1 tbsp of butter
  • 1 tsp of vanilla extract
  • 1 tsp of baking soda

Instructions

  1. Prepare a large microwave-safe bowl by greasing it with butter or lining it with parchment paper.

  2. In the bowl, combine the peanuts, sugar, corn syrup, and salt. Stir well to evenly distribute the ingredients.

  3. Microwave the mixture on high for 4 minutes.

  4. Stir in the butter and vanilla extract.

  5. Microwave for an additional 3-4 minutes, until the mixture turns golden brown and bubbly.

  6. Remove the bowl from the microwave and quickly stir in the baking soda. The mixture will foam up.

  7. Immediately pour the hot mixture onto a greased or parchment-lined baking sheet. Spread it out to your desired thickness.

  8. Allow the peanut brittle to cool and harden at room temperature for about 1 hour.

  9. Once completely cooled and hardened, break the peanut brittle into pieces and serve.
