How To Make Easy Microwave Cashew Brittle

  • 1tbspbuttersoftened
  • 1cupwhite sugar
  • ½cuplight corn syrup
  • cupscashews
  • 1tspvanilla extract
  • 1tspBaking Soda


  1. Spread butter onto a baking sheet.

  2. Combine sugar and corn syrup together in a microwave-safe bowl; heat in the microwave for 3½ minutes.

  3. Add cashews and heat in the microwave for another 3½ minutes.

  4. Stir vanilla extract into cashew mixture and heat in the microwave for 1¾ minutes.

  5. Stir baking soda into cashew mixture and quickly pour onto the prepared baking sheet. Cool brittle to room temperature and break into pieces.
