Ingredients

  • 4 citrus fruits (such as oranges or lemons)
  • 1 cup sugar
  • 1 cup water

Instructions

  1. Wash and dry the citrus fruits. Cut off the ends and score the peel into quarters. Carefully remove the peels in quarters.

  2. In a saucepan, bring water to a boil. Add the peels and simmer for 5 minutes. Drain and rinse with cold water.

  3. In the same saucepan, combine sugar and water. Bring to a boil, stirring until the sugar dissolves. Add the citrus peels and simmer for 45 minutes or until tender.

  4. Using a slotted spoon, transfer the peels to a wire rack to cool and dry for about 1 hour.

  5. Once dry, toss the peels with additional sugar to coat.

  6. Store in an airtight container at room temperature for up to 2 weeks.
