  • 2 cups grated carrots
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/4 cup vegetable oil
  • 1/4 cup unsweetened applesauce
  • 1/4 cup almond milk
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 1/2 cup chopped walnuts (optional)
  • 1/2 cup raisins (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.

  2. In a large mixing bowl, combine the grated carrots, flour, brown sugar, vegetable oil, applesauce, almond milk, vanilla extract, baking powder, baking soda, cinnamon, nutmeg, and salt. Mix well until the batter is smooth.

  3. Fold in the chopped walnuts and raisins, if using.

  4. Pour the batter into the prepared cake pan and spread it evenly.

  5. Bake for 40 minutes or until a toothpick inserted into the center comes out clean.

  6. Remove the cake from the oven and let it cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

  7. Once cooled, you can frost the cake with your favorite vegan cream cheese frosting or enjoy it as is.
