Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup buttermilk
  • 1 cup peeled and chopped apples
  • 1/2 cup toffee bits
  • 1/4 cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

  2. In a medium bowl, combine the flour, baking powder, baking soda, cinnamon, and salt. Set aside.

  3. In a large mixing bowl, cream together the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

  4. Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk. Mix until just combined.

  5. Gently fold in the chopped apples, toffee bits, and chopped walnuts (if using).

  6. Pour the batter into the prepared cake pan and smooth the top with a spatula.

  7. Bake for 40 minutes, or until a toothpick inserted into the center comes out clean.

  8. Remove the cake from the oven and let it cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely.

  9. Serve the toffee apple cake as is or with a drizzle of caramel sauce. Enjoy!
