  • 2 ripe bananas, mashed
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, softened
  • 1/4 cup sour cream
  • 1/2 tsp baking soda
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt
  • 1/4 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan.

  2. In a large mixing bowl, cream together the butter and sugar until light and fluffy.

  3. Add the mashed bananas, sour cream, and vanilla extract. Mix until well combined.

  4. In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.

  5. Gradually add the dry ingredients to the banana mixture, mixing until just combined.

  6. Fold in the chopped walnuts, if desired.

  7. Pour the batter into the prepared cake pan and smooth the top with a spatula.

  8. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.

  9. Remove from the oven and let the cake cool in the pan for 10 minutes. Then, transfer to a wire rack to cool completely.
