Ingredients
- 2 eggs
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1/4 cup fresh lemon juice
- 1 tsp lemon zest
- 1 tsp baking powder
- 1/4 tsp salt
- Powdered sugar, for dusting (optional)
Instructions

Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

In a mixing bowl, beat the eggs until light and fluffy. Gradually add in the sugar and butter, and mix well.

Stir in the lemon juice and zest.

In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing well after each addition.

Pour the batter into the prepared cake pan and smooth the top with a spatula.

Bake for 35 minutes, or until a toothpick inserted into the center comes out clean.

Remove the cake from the oven and let it cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely.
