How To Make Raspberry & Ginger Fridge Cake

Ingredients
- 250g digestive biscuits
- 150g butter, melted
- 300g sweetened condensed milk
- 150g fresh raspberries
- 2 tbsp ground ginger
- 200g white chocolate, melted
- Extra raspberries and ginger, for decoration
Instructions

Crush the digestive biscuits in a food processor or place them in a ziplock bag and crush with a rolling pin.

In a mixing bowl, combine the crushed biscuits with the melted butter and mix well.

Press the biscuit mixture into the base of a rectangular dish, forming the cake base.

In another bowl, mix the condensed milk with the raspberries and ground ginger until well combined.

Pour the raspberry mixture over the biscuit base and spread evenly.

Drizzle the melted white chocolate over the top of the cake.

Decorate with extra raspberries and ginger.

Place the cake in the fridge and let it set for at least 4 hours or overnight.

Cut into squares and serve chilled.
