  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, softened
  • 1/2 cup sour cream
  • 1/2 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup chopped pecans
  • 1/4 cup packed brown sugar
  • 1/2 tsp ground cinnamon

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit.

  2. In a mixing bowl, cream together the sugar and butter until light and fluffy.

  3. Add the eggs one at a time, beating well after each addition. Stir in the sour cream and vanilla extract.

  4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add this mixture to the creamed mixture, beating just until combined.

  5. In another small bowl, mix together the chopped pecans, brown sugar, and cinnamon to make the streusel topping.

  6. Spread half of the batter into a greased and floured 8-inch square baking dish. Sprinkle half of the streusel topping over the batter.

  7. Spoon the remaining batter over the streusel and smooth the top. Sprinkle the remaining streusel over the batter.

  8. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean. Allow the coffee cake to cool before serving.
