  • 4 eggs
  • 1 cup all-purpose flour
  • 1 cup sugar
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/4 tsp salt
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour your muffin pans.

  2. In a large mixing bowl, beat the eggs until frothy. Gradually add sugar while continuing to beat until well combined.

  3. Add the milk, vegetable oil, and vanilla extract. Mix well.

  4. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, beating until smooth.

  5. Pour the batter into the prepared muffin pans, filling each about 3/4 full.

  6. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.

  7. Remove from the oven and let the cakes cool for a few minutes before transferring them to a wire rack to cool completely.

  8. Dust with powdered sugar before serving.
