  • 2 eggs
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup extra virgin olive oil
  • 1/4 cup milk
  • 1 tsp baking powder
  • 1/2 tsp vanilla extract
  • Zest of 1 lemon

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a round cake pan.

  2. In a mixing bowl, whisk together eggs and sugar until light and creamy.

  3. Add olive oil, milk, and vanilla extract. Mix well.

  4. Gradually add flour and baking powder, mixing until fully incorporated.

  5. Stir in lemon zest.

  6. Pour batter into prepared cake pan and smooth the top.

  7. Bake for 30-40 minutes, or until a toothpick inserted into the center comes out clean.
