  • 1 cup gooseberries, washed and chopped
  • 1 cup all-purpose flour
  • 1/2 cup desiccated coconut
  • 1/2 cup sugar
  • 1/4 cup vegetable oil
  • 1/4 cup milk
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a cake pan.

  2. In a bowl, combine the flour, desiccated coconut, sugar, baking powder, and salt.

  3. In a separate bowl, whisk together the eggs, vegetable oil, milk, and vanilla extract.

  4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.

  5. Fold in the chopped gooseberries.

  6. Pour the batter into the prepared cake pan.

  7. Bake for 45 minutes, or until a toothpick inserted into the center comes out clean.

  8. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
