Ingredients

  • 1 1/2 cups fresh cranberries
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup milk

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

  2. In a small bowl, toss the fresh cranberries with 1/4 cup of flour to coat them.

  3. In a large mixing bowl, cream together the butter and sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.

  4. In a separate bowl, whisk together the remaining flour, baking powder, and salt. Gradually add the dry ingredients to the butter mixture, alternating with the milk. Begin and end with the dry ingredients. Mix until just combined.

  5. Gently fold in the flour-coated cranberries.

  6. Pour the batter into the prepared cake pan and spread it evenly.

  7. Bake for 40 minutes, or until a toothpick inserted into the center comes out clean.

  8. Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

  9. Serve the fresh cranberry cake as is, or dust with powdered sugar before serving.
