Ingredients

  • 1 cup dates, pitted and chopped
  • 1 cup boiling water
  • 1 tsp baking soda
  • 1/2 cup unsweetened applesauce
  • 1/4 cup vegetable oil
  • 1/2 cup brown sugar
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 180°C (350°F). Grease and flour a loaf pan.

  2. In a small bowl, combine the dates, boiling water, and baking soda. Let it sit for 5 minutes.

  3. In a large bowl, mix together the applesauce, vegetable oil, brown sugar, and vanilla extract.

  4. In another bowl, whisk together the flour, baking powder, and salt.

  5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.

  6. Fold in the date mixture and chopped walnuts, if desired.

  7. Pour the batter into the prepared loaf pan and smooth the top.

  8. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

  9. Remove from the oven and let it cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely.

  10. Slice and serve.
