Ingredients

  • 1 cup all-purpose flour
  • 1 cup crushed pineapple
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, melted
  • 1/4 cup chopped walnuts
  • 1/4 cup raisins
  • 1/2 tsp baking soda
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×5 inch loaf pan.

  2. In a mixing bowl, combine the flour, sugar, baking soda, and salt.

  3. Add the crushed pineapple (including the juice), melted butter, and vanilla extract to the dry ingredients. Mix well.

  4. Fold in the chopped walnuts and raisins.

  5. Pour the batter into the prepared loaf pan and smooth the top with a spatula.

  6. Bake for 45 minutes or until a toothpick inserted into the center comes out clean.

  7. Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
