  • 1 cup cobnuts, chopped
  • 2 apples, peeled and grated
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, melted
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • Powdered sugar, for dusting

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a loaf pan.

  2. In a bowl, mix together the chopped cobnuts, grated apples, flour, baking powder, cinnamon, and salt.

  3. In a separate bowl, whisk together the melted butter, granulated sugar, eggs, and vanilla extract.

  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

  5. Pour the batter into the prepared loaf pan and smooth the top.

  6. Bake for 45 minutes or until a toothpick inserted into the center comes out clean.

  7. Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

  8. Once cooled, dust the top with powdered sugar before serving.
