Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 2 medium-sized apples, peeled and thinly sliced
  • for the crumble topping:
  • 1/2 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, melted

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a loaf pan.

  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.

  3. In a separate large bowl, cream together the softened butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

  4. Gradually add the dry ingredients to the butter mixture, alternating with the milk. Mix until just combined.

  5. Pour half of the batter into the prepared loaf pan. Arrange the sliced apples evenly over the batter. Top with the remaining batter.

  6. In a small bowl, mix together the flour and sugar for the crumble topping. Add the melted butter and stir until crumbly. Sprinkle the crumble mixture over the top of the cake batter.

  7. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.

  8. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

  9. Serve and enjoy!
