Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 2 cups peeled, cored, and diced apples (about 2 medium-sized apples)
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a loaf pan and set aside.

  2. In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.

  3. In a separate large bowl, cream together the butter and sugar until light and fluffy. Add in the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

  4. Gradually add the flour mixture to the butter mixture, alternating with the milk. Begin and end with the flour mixture, mixing just until combined.

  5. Gently fold in the diced apples and nuts (if using).

  6. Pour the batter into the prepared loaf pan, smoothing the top with a spatula.

  7. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.

  8. Allow the apple loaf to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

  9. Serve and enjoy!
