Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 stick (1/2 cup) unsalted butter, softened
  • 1 cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 cup strong brewed coffee, cooled
  • 1/2 cup milk
  • 1/2 cup semi-sweet chocolate chips
  • Whipped cream and chocolate shavings for garnish (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a round cake pan.

  2. In a medium bowl, whisk together flour, cocoa powder, baking powder, and salt. Set aside.

  3. In a large bowl, cream together butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Stir in vanilla extract.

  4. In a small bowl, mix together coffee and milk. Gradually add the dry ingredients to the butter mixture, alternating with the coffee mixture, beginning and ending with the dry ingredients. Mix until just combined.

  5. Fold in chocolate chips. Pour batter into the prepared cake pan.

  6. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

  7. Once cooled, garnish with whipped cream and chocolate shavings, if desired. Serve and enjoy!
