Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup milk
  • 1/2 cup strong brewed coffee, cooled
  • 1/4 cup vegetable oil
  • 1 tsp vanilla extract
  • 1/2 cup whipped cream, for topping
  • 1/4 cup chocolate shavings, for garnish

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.

  2. In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.

  3. In a separate bowl, mix together the milk, cooled coffee, vegetable oil, and vanilla extract.

  4. Gradually add the wet ingredients to the dry ingredients and whisk until just combined.

  5. Pour the batter into the prepared cake pan and smooth the top with a spatula.

  6. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.

  7. Remove the cake from the oven and let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

  8. Once cooled, spread whipped cream over the top of the cake and sprinkle with chocolate shavings.

  9. Slice and serve the light & fluffy chocolate mocha cake.
