Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 3/4 cup unsalted butter, cold and cubed
  • 1 cup rhubarb, chopped
  • 1/2 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and line a 9×9-inch baking dish with parchment paper.

  2. In a food processor, combine flour and powdered sugar. Add in cold butter and pulse until mixture resembles coarse crumbs.

  3. Press the mixture evenly into the bottom of the prepared baking dish. Bake for 15 minutes or until lightly golden.

  4. In a mixing bowl, combine rhubarb, granulated sugar, cornstarch, and vanilla extract. Stir until rhubarb is coated with the sugar mixture.

  5. Spread the rhubarb mixture over the partially baked crust. Return to the oven and bake for an additional 30 minutes or until the rhubarb is tender and the crust is golden.

  6. Remove from the oven and let cool completely before slicing into bars.

  7. Serve and enjoy!
