Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup powdered sugar
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, chilled and cut into small pieces
  • 2 cups rhubarb, chopped
  • 1/2 cup granulated sugar
  • 2 tbsp cornstarch
  • 2 eggs

Instructions

  1. Preheat oven to 350°F and line an 8-inch square baking dish with parchment paper.

  2. In a large bowl, mix together flour, powdered sugar, and salt. Cut in butter with a pastry cutter or fork until mixture resembles coarse crumbs.

  3. Press mixture evenly into the bottom of prepared dish and bake for 18-20 minutes, or until crust is lightly golden.

  4. In a separate bowl, whisk together rhubarb, granulated sugar, cornstarch, and eggs until well combined. Pour mixture over crust and spread evenly.

  5. Bake for an additional 25-30 minutes, or until filling is set. Let cool completely before slicing and serving.
