Ingredients

  • 1 cup dried apricots
  • 1/2 cup almonds
  • 1/4 cup pumpkin seeds
  • 1/4 cup sunflower seeds
  • 1/4 cup chia seeds
  • 1/4 cup honey
  • 1/4 cup almond butter
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt

Instructions

  1. In a food processor, combine dried apricots, almonds, pumpkin seeds, sunflower seeds, chia seeds, honey, almond butter, vanilla extract, and salt.

  2. Process until the mixture forms a sticky dough-like texture.

  3. Line a square baking dish with parchment paper and press the mixture evenly into the dish.

  4. Place in the refrigerator for at least 1 hour to set.

  5. Once set, remove from the refrigerator and cut into bars or squares.

  6. Store in an airtight container in the refrigerator for up to a week.
