Ingredients

  • 1/2 cup unsalted butter, melted
  • 3/4 cup light brown sugar
  • 1 tsp vanilla extract
  • 1 large egg
  • 1 cup all-purpose flour
  • 1/4 tsp salt
  • 1/2 cup chopped dried apricots
  • 1/4 cup chopped pistachios

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×9 inch baking dish with parchment paper.

  2. In a mixing bowl, combine the melted butter, brown sugar, and vanilla extract. Stir until well combined.

  3. Add the egg to the mixture and whisk until smooth.

  4. In a separate bowl, whisk together the flour and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined.

  5. Fold in the chopped dried apricots and chopped pistachios.

  6. Pour the batter into the prepared baking dish and spread it evenly.

  7. Bake in the preheated oven for 20-25 minutes or until the edges are golden brown and a toothpick inserted into the center comes out clean.

  8. Allow the blondies to cool completely in the baking dish before cutting into squares.

  9. Serve and enjoy!
