Ingredients
- 1 cup long-grain white rice
- 1 can (15 oz) black beans, rinsed and drained
- 1 can (15 oz) diced tomatoes
- 1 onion, diced
- 2 cloves garlic, minced
- 1 jalapeno, seeded and diced
- 1 tsp ground cumin
- 1 tsp chili powder
- 1/2 tsp paprika
- 1/2 tsp salt
- 2 cups vegetable broth
- 2 tbsp olive oil
- Fresh cilantro, for garnish
Instructions

In a large skillet, heat the olive oil over medium heat. Add the diced onion, minced garlic, and jalapeno. Cook until the onion is translucent.

Add the rice to the skillet and stir to coat it with the oil. Cook for 1 minute.

Stir in the cumin, chili powder, paprika, and salt. Cook for another 2 minutes, until the spices are fragrant.

Pour in the vegetable broth and diced tomatoes with their juice. Bring the mixture to a boil, then reduce the heat to low.

Cover the skillet and simmer for 15 minutes, or until the rice is cooked and the liquid is absorbed.

Stir in the black beans and cook for an additional 5 minutes, until heated through.

Fluff the rice with a fork and garnish with fresh cilantro before serving.
