Ingredients

  • 4 boneless, skinless chicken breasts
  • salt and pepper, to taste
  • 1/2 cup all-purpose flour
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1/4 cup fresh lemon juice
  • 1/4 cup capers
  • 8 oz angel hair pasta
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Season the chicken breasts with salt and pepper. Dredge the chicken in flour, shaking off any excess.

  2. In a large skillet, heat the olive oil and butter over medium-high heat. Add the chicken and cook until golden brown on both sides, about 4-5 minutes per side. Remove the chicken from the skillet and set aside.

  3. In the same skillet, add the minced garlic and cook for 1 minute until fragrant. Add the chicken broth, lemon juice, and capers. Bring to a simmer and cook for 5 minutes, allowing the sauce to thicken slightly.

  4. Meanwhile, cook the angel hair pasta according to the package instructions. Drain and set aside.

  5. Return the chicken to the skillet and cook for an additional 2-3 minutes, or until the chicken is cooked through and the sauce has thickened.

  6. Divide the angel hair pasta onto plates and place a chicken breast on top. Spoon the sauce over the chicken and garnish with fresh parsley.
