Ingredients

  • 1 large onion, diced
  • 2 garlic cloves, minced
  • 1 tbsp ginger, minced
  • 1 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp turmeric
  • 1/2 tsp cinnamon
  • 1/4 tsp cayenne pepper
  • 4 cups vegetable or chicken broth
  • 1 can diced tomatoes
  • 1 bunch collard greens, stemmed and chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions and cook until translucent.

  2. Add garlic and ginger and cook for 30 seconds.

  3. Add cumin, paprika, turmeric, cinnamon, and cayenne pepper. Stir for 1 minute.

  4. Pour in broth and bring to a simmer.

  5. Add diced tomatoes and collard greens. Simmer for 30 minutes.

  6. Season with salt and pepper to taste.

  7. Serve hot and enjoy!
