Ingredients

  • 1 tbsp olive oil
  • 1 red onion, sliced
  • 2 garlic cloves, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup trimmed snow peas
  • 1 cup sliced mushrooms
  • 2 cups broccoli florets
  • 1/4 cup low-sodium soy sauce
  • 1 tbsp honey
  • 1 tsp grated ginger
  • Salt and pepper to taste

Instructions

  1. Heat the oil in a large skillet.

  2. Add the onion and garlic and sauté for 2 minutes.

  3. Add the bell peppers, snow peas, mushrooms, and broccoli and sauté for 5-7 minutes or until the veggies are tender-crisp.

  4. In a small bowl, whisk together soy sauce, honey, ginger, salt, and pepper.

  5. Pour the sauce over the veggies and toss gently to coat.

  6. Serve hot with rice or quinoa.
