A hearty and healthy chili with ground turkey, fire-roasted tomatoes, and kidney beans that’s perfect for a cold night in.

Serves:

Ingredients

  • 1 tbsp olive oil
  • 1 lb ground turkey
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1 can fire-roasted diced tomatoes, undrained
  • 1 can kidney beans, drained and rinsed
  • 1/2 cup water
  • Salt and pepper, to taste
  • Optional toppings: shredded cheese, sour cream, chopped cilantro

Instructions

  1. Heat olive oil in a large pot over medium-high heat.

  2. Add ground turkey and cook until browned, breaking it up with a wooden spoon.

  3. Add the onion, garlic, and bell peppers and cook until softened, about 5 minutes.

  4. Add the chili powder, cumin, smoked paprika, and salt and pepper. Stir to combine.

  5. Add the diced tomatoes, kidney beans, and water. Bring to a boil and then reduce heat to low and let simmer for 30 minutes.

  6. Serve hot with optional toppings.
