How To Make Richard Blais’s Liquid Nitrogen Ice Cream Sandwich Recipe

This futuristic dessert is made using liquid nitrogen to flash-freeze ice cream into a perfect sandwich.

Cooking: 5 minutes
Total: 15 minutes

Serves:

Ingredients

  • 2 cups of heavy cream
  • 1 cup of whole milk
  • ¾ cup of granulated sugar
  • 1 teaspoon of vanilla extract
  • 1 pinch of salt
  • 1 quart of liquid nitrogen
  • 8 cookies of your choice (chocolate chip, sugar, etc)

Instructions

  1. In a large bowl, whisk together heavy cream, milk, sugar, vanilla extract, and salt until fully combined.

  2. Slowly pour liquid nitrogen into ice cream mixture while constantly whisking.

  3. Once ice cream mixture starts to solidify (about 5 minutes), take a cookie and scoop out a small amount of ice cream onto it.

  4. Quickly place another cookie on top and press gently until ice cream sandwich is formed.

  5. Repeat with remaining cookies and ice cream mixture.
