  • 4 medium potatoes, peeled and diced
  • 2 boiled eggs, chopped
  • 1/4 cup diced onion
  • 1/4 cup diced celery
  • 1/2 cup mayonnaise
  • 1 tbsp mustard
  • 1 tbsp white vinegar
  • Salt and pepper to taste

Instructions

  1. Boil potatoes in a pot of salted water for 15-20 minutes or until tender. Drain and let cool for 5 minutes.

  2. In a large mixing bowl, combine potatoes, boiled eggs, onion, and celery.

  3. In a small bowl, whisk together mayonnaise, mustard, vinegar, salt, and pepper. Pour over potato mixture and toss to coat.
