Ingredients

  • 6 cups mixed greens
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, sliced
  • 1/2 cup Kalamata olives
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup lemon juice
  • 1/4 cup extra-virgin olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine mixed greens, cherry tomatoes, cucumber, red onion, Kalamata olives, feta cheese, and parsley.

  2. In a small bowl, whisk together lemon juice, olive oil, garlic, salt, and pepper.

  3. Pour dressing over salad and toss to combine.
