How To Make Potbelly Chicken Noodle Soup Recipe
A hearty and comforting soup filled with tender chicken, vegetables, and egg noodles.

Ingredients
- 1 pound chicken breasts, diced
- 6 cups chicken broth
- 2 medium carrots, peeled and sliced
- 2 stalks celery, sliced
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 bay leaf
- 2 cups egg noodles
- Salt and pepper, to taste
- Chopped parsley, for garnish
Instructions

In a large pot, heat a tablespoon of oil over medium heat. Add onions and garlic and sauté for 2-3 minutes until onions are translucent.

Add chicken broth, diced chicken breasts, carrots, celery, dried thyme, and bay leaf. Bring to a boil and reduce heat to let it simmer for 20-25 minutes until chicken is cooked through.

Add egg noodles to the pot and let it cook for an additional 7-10 minutes until they are tender.

Season with salt and pepper and garnish with chopped parsley before serving.
