How To Make Potbelly Chicken Noodle Soup Recipe

Ingredients

  • 1 pound chicken breasts, diced
  • 6 cups chicken broth
  • 2 medium carrots, peeled and sliced
  • 2 stalks celery, sliced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 2 cups egg noodles
  • Salt and pepper, to taste
  • Chopped parsley, for garnish

Instructions

  1. In a large pot, heat a tablespoon of oil over medium heat. Add onions and garlic and sauté for 2-3 minutes until onions are translucent.

  2. Add chicken broth, diced chicken breasts, carrots, celery, dried thyme, and bay leaf. Bring to a boil and reduce heat to let it simmer for 20-25 minutes until chicken is cooked through.

  3. Add egg noodles to the pot and let it cook for an additional 7-10 minutes until they are tender.

  4. Season with salt and pepper and garnish with chopped parsley before serving.
