A refreshing, tangy dessert that’s perfect for summer.
Serves:
Ingredients
- 1 cup of freshly squeezed lemon juice
- 1 cup of granulated sugar
- 1 1/2 cups of water
- Zest of 1 lemon
- Mint leaves (optional)
Instructions
-
In a saucepan, combine the lemon juice, sugar, water, and lemon zest. Heat over medium heat, stirring occasionally, until the sugar has dissolved.
-
Remove from heat and let cool to room temperature.
-
Once cooled, pour the mixture into a shallow dish and place in the freezer. Freeze for 1 hour.
-
After 1 hour, use a fork to scrape the frozen mixture. Return to the freezer and repeat every 30 minutes for 2-3 hours, or until you have a fluffy, icy texture.
-
To serve, spoon the lemon ice into bowls and garnish with fresh mint leaves, if desired.
