How To Make Gino’s Eggplant Parmesan Recipe

A classic Italian dish with layers of breaded eggplant, marinara sauce, and mozzarella cheese.

Ingredients

  • 2 medium-sized eggplants, sliced into 1/2 inch rounds
  • 1 1/2 cups of Italian-seasoned breadcrumbs
  • 1 cup of all-purpose flour
  • 3 eggs
  • 1/4 cup of milk
  • 1 tsp of salt
  • 2 cups of marinara sauce
  • 2 cups of shredded mozzarella cheese
  • 1/4 cup of grated parmesan cheese
  • 2 tbsp of olive oil

Instructions

  1. Preheat the oven to 375°F.

  2. In a small bowl, whisk eggs and milk together. In another bowl, mix together breadcrumbs and salt.

  3. Dredge eggplant slices in flour, then egg mixture, and finally coat in breadcrumbs.

  4. In a large skillet, heat olive oil over medium heat. Fry eggplant slices in batches until golden brown on both sides, approximately 2-3 minutes per side.

  5. Spread 1 cup of marinara sauce on the bottom of a large baking dish. Arrange a layer of eggplant slices on top, then sprinkle mozzarella and parmesan cheese. Repeat layers until all eggplant and sauce are used, ending with a layer of cheese.

  6. Bake in the preheated oven for approximately 30-35 minutes, or until cheese is melted and bubbly.

  7. Allow to cool slightly before serving.
