How To Make Gino’s Eggplant Parmesan Recipe
A classic Italian dish with layers of breaded eggplant, marinara sauce, and mozzarella cheese.

Ingredients
- 2 medium-sized eggplants, sliced into 1/2 inch rounds
- 1 1/2 cups of Italian-seasoned breadcrumbs
- 1 cup of all-purpose flour
- 3 eggs
- 1/4 cup of milk
- 1 tsp of salt
- 2 cups of marinara sauce
- 2 cups of shredded mozzarella cheese
- 1/4 cup of grated parmesan cheese
- 2 tbsp of olive oil
Instructions

Preheat the oven to 375°F.

In a small bowl, whisk eggs and milk together. In another bowl, mix together breadcrumbs and salt.

Dredge eggplant slices in flour, then egg mixture, and finally coat in breadcrumbs.

In a large skillet, heat olive oil over medium heat. Fry eggplant slices in batches until golden brown on both sides, approximately 2-3 minutes per side.

Spread 1 cup of marinara sauce on the bottom of a large baking dish. Arrange a layer of eggplant slices on top, then sprinkle mozzarella and parmesan cheese. Repeat layers until all eggplant and sauce are used, ending with a layer of cheese.

Bake in the preheated oven for approximately 30-35 minutes, or until cheese is melted and bubbly.

Allow to cool slightly before serving.
