Ingredients

  • 1 lb ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup grated parmesan cheese
  • 1 egg
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 4 cups chicken broth
  • 1 medium onion, chopped
  • 2 medium carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 1 cup orzo pasta
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a bowl, combine ground chicken, breadcrumbs, parmesan cheese, egg, garlic powder, onion powder, salt and pepper. Mix until well combined.

  2. Roll mixture into small meatballs (about 1-inch in diameter).

  3. In a large pot, bring chicken broth to a boil. Add meatballs and let simmer for 10 minutes.

  4. Add chopped onion, carrots and celery to the pot and let cook for an additional 10 minutes.

  5. Stir in orzo pasta and let cook until al dente for about 8-10 minutes.

  6. Season with salt and pepper to taste.

  7. Garnish with fresh parsley.
