How To Make Fountain Blue Restaurant’s Shrimp Scampi Recipe

Ingredients

  • 1 lb angel hair pasta
  • 1 lb large shrimp, peeled and deveined
  • 1/2 cup unsalted butter
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 1/2 cup dry white wine
  • 1/4 cup freshly squeezed lemon juice
  • 1/4 tsp red pepper flakes
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. Cook the angel hair pasta according to package instructions until al dente.

  2. In a large skillet, heat the butter and olive oil over medium heat. Add the garlic and red pepper flakes and sauté for 1-2 minutes until fragrant.

  3. Add the shrimp and cook for 2-3 minutes on each side until pink. Remove the shrimp from the pan and set aside.

  4. Deglaze the pan with white wine and lemon juice, scraping any brown bits from the bottom of the pan. Cook for 2-3 minutes until the liquid has reduced by half.

  5. Add the cooked pasta to the skillet and toss until coated in the sauce. Add the shrimp back to the pan and stir to combine.

  6. Season with salt and pepper to taste and garnish with fresh parsley.
