Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/2 cup all-purpose flour
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup olive oil
  • 1/2 cup sliced onions
  • 1 cup sliced mushrooms
  • 1/2 cup Marsala wine
  • 1/2 cup chicken broth
  • 2 tbsp butter
  • Fresh parsley for garnish

Instructions

  1. Place chicken breasts between two pieces of plastic wrap and pound them with a mallet until they are evenly thin.

  2. Combine flour, salt, and pepper in a shallow dish. Dredge chicken breasts in flour mixture, shaking off excess.

  3. Heat olive oil in a skillet over medium-high heat. Cook chicken breasts for 4 minutes per side, or until golden brown. Remove from skillet and keep warm.

  4. Add onions and mushrooms to the same skillet. Cook for 5 minutes, or until vegetables are tender.

  5. Pour Marsala wine and chicken broth into skillet. Simmer for 3-4 minutes, or until sauce thickens. Stir in butter until melted.

  6. Add chicken back to skillet and spoon sauce over the top. Garnish with fresh parsley and serve.
