Ingredients

  • -2 cups mixed greens
  • -1 cup cherry tomatoes, halved
  • -1/2 cup cucumber, diced
  • -1/2 cup red onion, thinly sliced
  • -1/2 cup feta cheese, crumbled
  • -1/4 cup Kalamata olives
  • -1/4 cup pine nuts, toasted
  • -1/4 cup extra virgin olive oil
  • -2 lemons, juiced
  • -1 tbsp Dijon mustard
  • -1 tsp honey
  • -Salt and pepper to taste

Instructions

  1. In a large bowl, mix greens, cherry tomatoes, cucumbers, red onions, feta cheese, olives, and pine nuts.

  2. In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, honey, salt, and pepper.

  3. Pour dressing over salad and toss to coat.
