Ingredients

  • 1 lb. ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1/2 cup frozen peas
  • 1/2 cup frozen carrots
  • 1/2 cup frozen corn
  • 1 tbsp. tomato paste
  • 1 tsp. Worcestershire sauce
  • 1 cup beef broth
  • Salt and black pepper to taste
  • 2-3 cups of prepared mashed potatoes

Instructions

  1. Preheat oven to 375 degrees F.

  2. In a large skillet, brown the ground beef and onion over medium heat for 7-8 minutes.

  3. Add garlic and cook for an additional 2 minutes.

  4. Add peas, carrots, corn, tomato paste, Worcestershire sauce, and beef broth. Stir to combine.

  5. Simmer for 10-15 minutes, or until broth has reduced by half.

  6. Pour mixture into a greased 9×13 inch baking dish.

  7. Spread prepared mashed potatoes evenly over the top of the beef mixture.

  8. Bake for 25-30 minutes or until the potatoes are golden brown.
