Ingredients

  • 500g boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tbsp vegetable oil
  • 1 large onion, finely chopped
  • 3 cloves of garlic, minced
  • 1 tbsp ginger paste
  • 2 tsp ground coriander
  • 2 tsp ground cumin
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chili powder
  • 1/2 cup plain Greek yogurt
  • 1 cup low-fat coconut milk
  • 1/4 cup almond flour
  • Salt to taste
  • Fresh coriander leaves, for garnish

Instructions

  1. Heat oil in a large pan and sauté the chopped onions until golden brown.

  2. Add minced garlic and ginger paste, and cook for another minute.

  3. Add the chicken pieces, ground coriander, cumin, turmeric, and red chili powder. Stir well to coat the chicken with spices.

  4. Cook until the chicken is browned on all sides.

  5. In a separate bowl, mix Greek yogurt, coconut milk, almond flour, and salt.

  6. Pour the yogurt mixture over the chicken and stir well.

  7. Cover the pan and simmer for 20-25 minutes until the chicken is cooked through and the sauce thickens.

  8. Garnish with fresh coriander leaves and serve hot with rice or naan bread.
