Ingredients
- 1 lb ground turkey
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves of garlic, minced
- 1 cup frozen peas
- 1 cup frozen corn
- 1 cup low-sodium chicken broth
- 2 tbsp tomato paste
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 tsp salt
- 1/2 tsp black pepper
- 4 cups mashed cauliflower (recipe below)
- Cooking spray
Instructions

Preheat the oven to 375°F (190°C).

In a large skillet, cook the ground turkey over medium heat until browned. Remove from the skillet and set aside.

In the same skillet, add the diced onion, carrots, celery, and garlic. Cook until the vegetables are tender, about 5 minutes.

Add the cooked turkey back to the skillet, along with the frozen peas, frozen corn, chicken broth, tomato paste, dried thyme, dried rosemary, salt, and black pepper. Stir everything together and let simmer for 5 minutes.

Spray a 9×9-inch baking dish with cooking spray. Pour the turkey and vegetable mixture into the dish, spreading it out evenly.

Spoon the mashed cauliflower on top of the turkey mixture, spreading it out to cover the entire surface.

Bake in the preheated oven for 20-25 minutes, or until the top is lightly browned.

Allow to cool for a few minutes before serving.
