How To Make Paillard of Chicken with Lemon & Herbs

Ingredients
- 4 chicken breast fillets
- 2 lemons, juiced and zested
- 2 tbsp olive oil
- 2 cloves of garlic, minced
- 2 tsp fresh rosemary, chopped
- 2 tsp fresh thyme leaves
- Salt and pepper to taste
- Optional: lemon slices and fresh herbs for garnish
Instructions

Place the chicken fillets between two sheets of plastic wrap and gently pound them to an even thickness of about 1/4 inch.

In a bowl, combine the lemon juice, lemon zest, olive oil, minced garlic, rosemary, and thyme. Season with salt and pepper.

Place the chicken fillets in a shallow dish and pour the marinade over them. Make sure to coat both sides. Let it marinate for at least 10 minutes, or up to 1 hour if time allows.

Preheat a grill or grill pan over medium-high heat.

Remove the chicken fillets from the marinade, allowing any excess marinade to drip off. Discard the marinade.

Grill the chicken fillets for about 4-5 minutes per side, until cooked through and golden brown. Cooking time may vary depending on the thickness of the fillets.

Remove the chicken from the grill and let it rest for a few minutes before serving.

Serve the paillard of chicken with lemon slices and fresh herbs, if desired.
