How To Make Chicken Sausage and Mushroom Risotto
Creamy, savory and oh so satisfying! This risotto features chicken sausage and earthy mushrooms.
Serves:
Ingredients
- 1 tbsp olive oil
- 1 lb chicken sausage, sliced
- 1 onion, diced
- 2 cloves garlic, minced
- 8 oz mushrooms, sliced
- 1 1/2 cups arborio rice
- 1/2 cup white wine
- 4 cups chicken broth
- 1/2 cup grated parmesan cheese
- Salt and pepper to taste
Instructions

Heat oil in a large saucepan or pot over medium-high heat. Add chicken sausage and cook until browned. Transfer to a plate.

Add onion and garlic to the pot and cook until softened. Add mushrooms and cook for 5 minutes.

Stir in rice and cook for 1-2 minutes until coated in oil.

Pour in wine and cook until fully absorbed. Add chicken broth, 1/2 cup at a time, stirring until absorbed before adding more.

Once all broth has been added and rice is tender, stir in parmesan cheese and reserved chicken sausage. Season with salt and pepper to taste.
