Ingredients

  • 4 boneless, skinless chicken breasts
  • 8 ounces wild mushrooms, sliced
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • Salt and pepper, to taste
  • 2 tablespoons chopped fresh parsley, for garnish

Instructions

  1. Season the chicken breasts with salt and pepper.

  2. In a large skillet, heat the butter and olive oil over medium heat.

  3. Cook the chicken breasts until they are browned on both sides and cooked through, about 4-5 minutes per side. Remove from the skillet and set aside.

  4. In the same skillet, add the mushrooms and garlic. Cook until the mushrooms are browned and tender, about 5 minutes.

  5. Add the chicken broth to the skillet and bring to a simmer. Cook for 2 minutes, allowing the liquid to reduce slightly.

  6. Stir in the heavy cream and season with salt and pepper. Simmer for an additional 5 minutes, or until the sauce has thickened.

  7. Return the chicken breasts to the skillet and cook for an additional 2 minutes, or until heated through.

  8. Serve the creamy chicken and wild mushrooms with a sprinkle of fresh parsley on top.
