Ingredients

  • 1 whole chicken (about 4 lbs)
  • 8 oz wild mushrooms, sliced
  • 4 cloves of garlic, minced
  • 4 tbsp unsalted butter, softened
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme
  • 1/2 tsp dried rosemary

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a small bowl, mix together the minced garlic, softened butter, salt, pepper, thyme, and rosemary to make the garlic butter.

  3. Pat the chicken dry and season it generously with salt and pepper. Place the chicken in a roasting pan.

  4. Gently lift the skin of the chicken and spread the garlic butter mixture evenly under the skin.

  5. Heat the olive oil in a large skillet over medium heat. Add the sliced mushrooms and cook until they release their moisture and start to brown.

  6. Spoon the cooked mushrooms over the chicken.

  7. Roast the chicken in the preheated oven for about 1 hour and 30 minutes, or until the internal temperature reaches 165°F (74°C) and the juices run clear.

  8. Remove the chicken from the oven and let it rest for 10 minutes before carving.

  9. Serve the roast chicken with the mushrooms on the side.
