  • 4 chicken breasts, boneless
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 2 celery stalks, chopped
  • 3 cloves of garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (6 oz) tomato paste
  • 1 cup chicken broth
  • 2 tablespoons Creole seasoning
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon cayenne pepper, or to taste
  • Salt and pepper, to taste
  • Vegetable oil

Instructions

  1. Season the chicken breasts with salt, pepper, and 1 tablespoon of Creole seasoning.

  2. In a large skillet, heat vegetable oil over medium-high heat. Add the chicken breasts and cook for about 4-5 minutes per side until browned. Remove from the skillet and set aside.

  3. In the same skillet, add the onion, bell pepper, celery, and garlic. Cook for about 5 minutes until the vegetables are softened.

  4. Stir in the tomato paste, diced tomatoes, chicken broth, paprika, dried thyme, dried oregano, cayenne pepper, and remaining Creole seasoning. Bring to a simmer.

  5. Return the chicken breasts to the skillet and spoon the sauce over them. Cover and simmer for about 30 minutes until the chicken is cooked through and tender.

  6. Serve the Chicken Creole over rice or with crusty bread.
