How To Make Dutch Oven Moroccan Chicken Recipe

A fragrant and flavorful chicken dish cooked in a Dutch oven, inspired by the spices of Morocco.

Serves:

Ingredients

  • 2 lbs. chicken legs and thighs, skin-on
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 4 garlic cloves, minced
  • 2 tsp paprika
  • 1 tsp ground cumin
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/4 tsp cayenne pepper
  • 1/2 cup chicken broth
  • 1/2 cup green olives, pitted
  • 1/4 cup raisins
  • 1 lemon, sliced
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 350°F.

  2. In a Dutch oven, heat olive oil over medium heat. Add chicken and brown on all sides. Remove from Dutch oven and set aside.

  3. In the same pan, sauté onion and garlic until softened.

  4. Add paprika, cumin, ginger, cinnamon, cayenne pepper, salt, and pepper, and stir until fragrant.

  5. Return chicken to the Dutch oven. Add chicken broth, olives, raisins, and lemon slices.

  6. Cover Dutch oven and bake for 1 hour. Remove cover and bake for an additional 30 minutes.

  7. Serve with couscous or rice.
